Baltic Bi Bim Bap

I was introduced to Bi Bim Bap by the Perfect Health Diet blog: Bi Bim Bap - the food looked fresh, fun and flavoursome, and something I wanted to do for myself.

I had some fun making up a kind of British Bi Bim Bap and this morning set about making up a Baltic inspired version.

Using leftover Jansson's Temptation as the foundation stone, topped with a fried egg and all manner of Baltic ingredients can be built up around the edge.

I went for pickled herrings, smoked salmon, sausages, sauerkraut, radish, grated carrot, blueberries, pickled gherkin, pickled beetroot, soured cream and a little turmeric sprinkled over.

Huge fun!

What a seriously sound breakfast for an energetic day ahead.
